Your Late-Summer Entertaining Guide

At this time of year, my inbox seems to be packed with suggestions to ‘top up.’ In the run-up to 28 February (financial year-end), it’s all about topping up tax-free savings, adding to provident funds, and making Section 18A donations. They clearly don’t know me at all!


Now, if they were suggesting that I top up my glass of red wine or add an extra canapé to my plate, I’d be all in.


Which led me to think about what ‘topping up’ actually means to us at Dish. It’s not just the golden hour that matters at a party, it’s the moment someone quietly goes back for seconds. That’s when you know the evening has ‘landed.’


We call it the Rule of 20. The first 20 minutes of any event set the tone for everything that follows. Get those right—the canapé that makes someone raise an eyebrow, the glass that appears before anyone has to ask—and the rest of the evening takes care of itself. Your guests relax. You relax. Nobody’s stressing. They’re just enjoying themselves and occasionally drifting back to the table for ‘one more of whatever that was.’


That’s the kind of topping up we’re here for.
