My Caprese Love Affair….
One of my all-time favourite salads when entertaining at home is a Caprese. I usually serve it as a snack with toasted sourdough. The creamy burrata oozing over the ripe and juicy tomatoes and homegrown basil is ridiculously delicious for something that requires almost zero effort (which is basically my love language).
It's all about the ripeness and flavour of the tomatoes and the quality of the burrata. Simple ingredients, maximum impact.
Kitchen hack incoming: No matter my restraint (almost zero, I know! :) ) and however hungry the guests claim to be, there are ALWAYS leftovers. Which is where the magic happens. Our family has devised two genius ways of dealing with them. The original method: cook up the bits that remain, blitz with a stick blender, and freeze. Later, it comes back to life as a pasta sauce with loads of parmesan - absolute winner! The updated version does the same thing, except we just bring it to temperature so all that fresh tomato and basil flavour stays bright and zingy.
Both versions are equally delicious - and prove that the best relationships know how to reinvent themselves.
