For dishes like next week's 'proper' Cottage Pie with a beef shin and mince ragu filling, we've taken a leaf out of Rassie's playbook by matching the plan with the players. Chef Low-and-Slow Chris may not be as light on his feet as Cheslin (being double the height doesn't make it easy), but he dazzles on the pass. Okay, so it's the kitchen pass, although you'd be amazed at his ability to sidestep other chefs on his way to the ovens.
Chris is the best there is at converting produce into a delicious and hearty braise, which is exactly what goes into our Cottage Pie under a creamy mashed potato topping. We think it's so good that we might even stand at attention and sing the national anthem before tucking in!
Not a red meat fan? Craig's Fisherman's Pie, with smoked haddock and linefish in a creamy dill sauce, is equally worthy of an anthem.
For dessert, we have Old-School Peppermint Crisp Tart, and the pastry team is on strict instructions to bring me a Peppermint Crisp and a glass of milk before they start their prep (IYKYK).
